We then talked about the history of momo, why it suddenly got so popular, in which cities and states their momo are being sold the most. We also discussed the gap in the cuisine market of India and potential foods that have a huge market in India. He also talked about the pick-up food model is better than cloud kitchens and how they have the potential to grow more.
Towards the end, we discussed why he says the future will belong to businesses that started in small towns and whether having business at railway stations and airports affects the brand positioning of the business. He then shared the top 3 mistakes small restaurants make, he also shared advice for new restaurant owners and compared Zomato and Swiggy.
